The main points of this standard are:  

- product hygiene
- personal hygiene
- appliance and facility hygiene
- the cold chain is maintained from production via transport and in-house storage to processing of   the food in the kitchen
- documentation of all relevant measures
- regular training of all employees
- regular inspection by TÜV Süd inspection authority
- unannounced inspections by the Trading Supervision Office
