Is "regional" the new "organic"?
In any case, it is far easier to keep production methods transparent with regional products. Shorter delivery routes are more environmentally compatible and save energy. We therefore buy large shares of several product groups from regional suppliers. These include fresh potatoes, mineral water and bakery products.
In 2016, we even received the "Pioneer Canteen" award from the NRW Ministry of the Environment for these measures!
Consistent regional purchasing would, however, also mean restriction to seasonal offers. Should we leave out tomatoes and cucumbers for 8 months a year? Should we offer only cabbage and root vegetables in winter? Unthinkable! But: strawberries and asparagus are really only needed during the local season.
With the approval of our guests, we would like to expand our focus on regional food supplies even more, wherever possible.
